The signature attributes of copper, even heat distribution and rapid response to temperature change, make Falk Culinair frying pans a natural choice for cooking enthusiasts. Our 20cm copper frying pan is the ideal size for single portion cooking.  Browning a steak or chop, frying tomatoes, or perhaps searing a generous piece of tuna, this little gem performs well. The patented bimetal construction distributes heat evenly while the stainless steel interior prevents chemical interactions with food.

This perfectly proportioned pan has all the features of its larger counterparts, including a flared lip, brushed surfaces, cast iron handle, and the ideal ratio of surface area to height for crisply fried foods.  All of our frying pans put the power of copper in your hands.  Our cookware may not improve your cooking skills, but it certainly improves the odds.

Use tips

  • Ideal for both electric and gas hobs.
  • Oven safe to 230°C/450°F/Gas Mark 8.
  • Because of its superior conductivity, copper cookware rarely requires full heat on a hob, typically no more than 50-75% of full power.  Use a lower flame when cooking with gas.
  • We recommend seasoning pan interiors with a vegetable oil occasionally prior to frying and sautéing, and always use a small amount of oil when pre-heating.

Care tips

  • Always allow pots and pans to cool before cleaning.
  • Do not put copper cookware in a mechanical dishwasher.
  • We do not recommend the use of products containing bleach for cleaning copper cookware.
  • Hand washing in warm soapy water is normally all that is required.  Always dry immediately after washing with a soft cloth.
  • Copper will develop a rich patina over time.  This will not affect cooking performance.
  • To keep copper pans looking like new, use a polish suitable for copper and a fine abrasive pad.
  • Apply a light coat of vegetable oil to cast iron handles from time to time to prevent rusting.

The sides are deep and I bought a lid, so I can also use it to steam and saute, and I love the angle of the handle, which makes it very easy to use. No More Analon I purchased a few items to replace my worn out Analon range of frying pans. Falk have higher sides than I'm used to but thats fine, they provide almost instant heat as they touch the gas and are quick to respond to changes of heat. Also Signature range blends beautifully with my modern kitchen, the handles don't heat up and are straighter than the cast iron which I find easier to handle. Why is this not offered as an option in the UK?

(For that reason I returned their copper Wok which was unsuited, in my view, for very hot fusion cooking - as well as being too heavy for one handed use). You have to think carefully about how you will use a copper frying pan as I've already discovered it's easy to burn. I have plans for my favourite - delicate scallops and chorizo
